Red Velvet Cake
with Cream Cheese frosting recipe

Ingredients

  • 1 ½ sticks butter
  • 2 large eggs
  • 1 tsp vanilla
  • 1 tsp salt
  • 2 ½ cups flour
  • 1 ½ cups sugar
  • 2 TBSP red gel food coloring
  • 2 TBSP unsweetened cocoa
  • 1 cup buttermilk (Need a substitute for buttermilk? Click HERE)
  • 1 TBSP vinegar
  • 1 tsp baking soda

  • Directions

    Preheat oven to 350°. Grease and flour 3 8-inch round layer cake pans or 2 9-inch cake pans.

    Mix butter and sugar until light and fluffy. Add eggs and beat 1 minute longer. Beat in vanilla until blended.

    Add cocoa, food coloring (until desired color is achieved - about 2 TBSP), flour and salt. Beat on low to medium speed.

    Combine baking soda and vinegar in cup and add to cake batter. Spoon batter evenly into the cake pans; bake at 350° for 22 to 28 minutes, or until toothpick comes out clean.

    Cool, remove from pans and frost tops and sides, while adding cake layers.

    Cream Cheese Frosting Recipe

  • 8 ounce package of cream cheese, softened (best to use full fat cream cheese)
  • 1 stick butter, softened
  • 2 tsp vanilla
  • 1 lb. pkg. powdered (confectioners) sugar
  • Beat cream cheese and butter until smooth. Blend in vanilla. Gradually beat powdered sugar into cream mixture. Cover with plastic wrap and place in the refrigerator to firm up icing to your desired consistancy.


    Substitute for Buttermilk

    Don't have any buttermilk in the fridge? Looking for a substitute for buttermilk? No problem!

    Place a Tablespoon of white vinegar or lemon juice in a liquid measuring cup. Add enough milk to bring the liquid up to the one-cup line. Let it sit for 10 minutes. Measure out the amount of buttermilk that you need for the recipe. Use only what you need and discard the rest.
