Fondant Icing Cupcakes
I made these cupcakes from a homemade fondant icing recipe that my wife uses. These cupcakes were for my manager's birthday. Everyone at my workplace always loves our fondant cupcakes.
First, we baked plain chocolate cupcakes and let them cool. We use a marshmallow fondant icing recipe for the cake decorating.
To make a marshmallow fondant icing, microwave a mix of marshmallow and few drop of water for 20-30 seconds. Take it out and stir it, and microwave it for another 20-30 seconds. Repeat the process, until it is melted. Be sure not to over cook.
In another bowl, spread vegetable shortening inside the bowl and on your hand. Pour some confectioners sugar and the marshmallow mix inside the bowl and knead it. It is sticky at first, but keep kneading. Add the confectioners sugar until you get to desired texture (a little harder than play-doh).
Keep the icing mixture in the refrigerator for at least an hour for it to set.
Now the fun part. Knead some fondant icing with the food coloring of your liking. I used red and black for these cupcakes.
You can decorate the cupcakes according to your design. It is like playing play-doh, but it's edible. :)
